Classic French Crepes

Instructions

Step 1: In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth.

Step 2: Let the batter rest for 15 to 20 minutes to help create tender crepes.

Step 3: Heat a nonstick skillet or crepe pan over medium heat and lightly grease with butter or oil.

Step 4: Pour about 1/4 cup of batter into the pan and swirl quickly to spread the batter into a thin layer.

Step 5: Cook the crepe for 1 to 2 minutes until the edges begin to lift and the underside is lightly golden.

Step 6: Flip the crepe carefully and cook for another 30 seconds on the other side.

Step 7: Transfer the cooked crepe to a plate and repeat with the remaining batter.

Step 8: Roll or fold the crepes and serve warm with powdered sugar or your favorite fillings.

Storage and Reheating Tips

Store leftover crepes in an airtight container in the refrigerator for up to 3 days, separating layers with parchment paper.

To reheat, warm the crepes in a skillet over low heat for about 30 seconds per side or microwave for 10 to 15 seconds until soft and warm.
