Instructions
Step 1: In a pot, heat coconut oil over medium heat. Add chopped onion and cook until soft, about 4-5 minutes.
Step 2: Stir in garlic, ginger, turmeric, cumin, and chili flakes if using. Cook for 1 minute until fragrant.
Step 3: Add the red lentils, coconut milk, and broth or water. Bring to a simmer.
Step 4: Reduce heat to low and simmer uncovered for 20-25 minutes, stirring occasionally, until lentils are soft and the dal has thickened.
Step 5: Season with salt and pepper to taste. If needed, add more broth to reach desired consistency.
Step 6: Serve warm, topped with fresh herbs and a side of steamed rice.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stove or in the microwave, adding a splash of water or broth as needed. Dal can also be frozen for up to 2 months.
