Step 1: In a small bowl, whisk together the vanilla yogurt, honey (or maple syrup), lemon juice, and poppy seeds (if using) to make the creamy dressing.
Step 2: In a large mixing bowl, combine the pineapple, grapes, kiwis, strawberries, blackberries, and clementine segments.
Step 3: Pour the creamy dressing over the fruit and gently toss to coat all the pieces evenly.
Step 4: Chill in the refrigerator for 15-30 minutes before serving for best flavor.
Step 5: Serve cold, garnished with a few fresh mint leaves if desired.
Storage Information
Store leftover creamy fruit salad in an airtight container in the refrigerator for up to 2 days. Stir gently before serving again, as the dressing may separate slightly. Best enjoyed fresh, as the fruit will release juices over time.
