step 1 In a bowl, mix buttermilk with paprika, garlic powder, onion powder, pepper, salt, and cayenne. Add chicken, cover, and marinate for at least 1 hour or overnight in the fridge.
step 2 In a separate bowl, whisk together flour, cornstarch, paprika, salt, and pepper.
step 3 Remove chicken from marinade and dredge in the flour mixture, pressing to coat thoroughly.
step 4 Heat oil in a deep skillet or fryer to 350°F (175°C). Fry chicken pieces for 5–7 minutes until golden brown and cooked through. Drain on a paper towel-lined plate.
step 5 Toast brioche buns lightly in a pan or toaster.
step 6 Spread mayo or spicy aioli on the bottom bun. Add lettuce, crispy chicken, pickles, onions, and cheese if using.
step 7 For a BBQ twist, drizzle BBQ sauce over the chicken before adding the top bun.
step 8 Serve sandwiches hot with a side of crispy crinkle-cut fries sprinkled with salt.
Storage and Reheating Tips.
Store leftover fried chicken in an airtight container in the fridge for up to 3 days. Reheat in an oven or air fryer at 375°F (190°C) until crispy. Avoid microwaving to maintain the crispiness. Toast fresh buns before serving and reheat fries in the oven or air fryer for best results.
