Instructions

Step 1. In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder.

Step 2. Add the chicken pieces to the buttermilk mixture, cover, and refrigerate for at least 4 hours or overnight.

Step 3. In another bowl, whisk together the flour, cornstarch, baking powder, cayenne pepper, oregano, and thyme.

Step 4. Remove the chicken from the marinade and dredge each piece thoroughly in the seasoned flour mixture.

Step 5. Let the coated chicken rest for 10 minutes to help the coating adhere.

Step 6. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).

Step 7. Fry the chicken in batches for 12 to 15 minutes, turning occasionally, until golden brown, crispy, and cooked through to an internal temperature of 165°F (74°C).
