Instructions
Step 1: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
Step 2: In a large bowl, toss the halved potatoes and sliced onions with olive oil, minced garlic, paprika, thyme, salt, and pepper until well coated.
Step 3: Spread the mixture evenly on the prepared baking sheet in a single layer.
Step 4: Roast for 30-35 minutes, flipping halfway through, until the potatoes are crispy and golden and the onions are caramelized.
Step 5: Remove from the oven and, if desired, sprinkle with grated Parmesan cheese while hot.
Step 6: Garnish with chopped fresh parsley before serving.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to regain crispiness before serving.
