Extra Crispy Fried Chicken & Potato Plate

Instructions

Step 1: Pat the chicken drumsticks dry with paper towels and season generously with salt and pepper.

Step 2: In one bowl, combine flour, paprika, garlic powder, salt, and pepper. In another bowl, place beaten eggs. In a third bowl, mix breadcrumbs with a pinch of salt.

Step 3: Coat each drumstick in the flour mixture, then dip into beaten egg, and finally roll in the breadcrumb mixture for extra crunch.

Step 4: Heat oil in a deep skillet or fryer to 350°F. Carefully place the coated drumsticks into the hot oil and fry for 12-15 minutes until golden brown and cooked through.

Step 5: In the same oil, fry the potato wedges for 8-10 minutes until golden and crispy. Remove and drain on paper towels.

Step 6: Arrange lettuce on a plate as your base, then top with sliced cucumbers, cherry tomatoes, and red onion slices.

Step 7: Place the crispy fried chicken and golden potato wedges on the plate alongside the fresh salad. Serve immediately while hot and crispy.

Storage and Reheating Tips

Store leftover fried chicken in an airtight container in the refrigerator for up to 3 days. Keep the salad components separate to prevent them from becoming soggy.

To reheat the chicken, place it in a preheated 350°F oven for about 10 minutes until warmed through. This method helps restore some of the original crispiness better than microwaving.

You can also enjoy the chicken cold the next day as a delicious lunch option. Simply assemble fresh salad ingredients and serve alongside.
