Instructions
Step 1: Cook the sausages in a skillet over medium heat for 8-10 minutes, turning occasionally until browned and cooked through. Set aside on a plate.
Step 2: In a shallow bowl, whisk together 2 eggs, 1/2 cup milk, vanilla extract, and sugar until well combined.
Step 3: Heat 1 tbsp butter in the same skillet over medium heat. Dip each bread slice into the egg mixture, coating both sides evenly.
Step 4: Place coated bread slices in the hot butter and cook for 3-4 minutes per side until golden brown and crispy. Transfer to a plate.
Step 5: In a bowl, whisk together 4 eggs, 2 tbsp milk or cream, salt, and pepper. Set aside.
Step 6: Add remaining butter to the skillet over medium-low heat. Pour in the egg mixture and stir gently and continuously for 3-4 minutes until creamy and just set.
Step 7: Plate everything together, top eggs with fresh herbs if desired, and serve immediately with sausages and French toast alongside.
Storage and Reheating Tips
French toast keeps well in the refrigerator for up to 3 days when stored in an airtight container. Reheat slices in a toaster oven at 350°F for about 5 minutes to restore crispness without drying them out.
Scrambled eggs are best enjoyed fresh, but leftovers can be stored separately for 1-2 days. Reheat gently in a nonstick pan over low heat with a splash of milk to restore creaminess.
Cooked sausages can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat in a skillet over medium heat or microwave for 30-60 seconds until warmed through.
For make-ahead convenience, prepare the French toast egg mixture the night before and store it covered in the refrigerator. In the morning, simply dip and cook the bread slices as directed for a faster breakfast preparation.
