Fresh Rice Paper Rolls with Peanut Dipping Sauce

Instructions

Step 1: Prepare all your fillings and have them ready to go. Fill a large shallow dish with warm water.
Step 2: Dip one rice paper wrapper into the water for about 10-15 seconds until just softened. Lay it flat on a damp kitchen towel or clean surface.
Step 3: Layer a small amount of each filling (noodles, veggies, herbs, and protein) in the center of the wrapper. Be careful not to overfill.
Step 4: Fold the bottom edge over the filling, then fold in the sides, and roll tightly like a burrito. Repeat with remaining wrappers and ingredients.
Step 5: For the peanut sauce, whisk together peanut butter, soy sauce, hoisin, rice vinegar, sesame oil, and minced garlic. Add warm water gradually until desired consistency is reached.
Step 6: Serve the rolls with the peanut dipping sauce and garnish with crushed peanuts if desired.

Storage Information

Rice paper rolls are best enjoyed fresh, but you can store them in an airtight container lined with damp paper towels for up to 1 day. Keep them covered to prevent drying out. Store the peanut sauce separately in the fridge for up to 5 days.
