Instructions
Step 1: Prepare your lobster tails by splitting them lengthwise and brushing the meat with 2 tablespoons melted butter mixed with minced garlic.
Step 2: Season the lobster meat with salt, pepper, paprika, and red pepper flakes, then set aside on a foil-lined baking sheet.
Step 3: Heat olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
Step 4: Pat scallops completely dry and season both sides generously with salt and pepper.
Step 5: Place scallops in the hot skillet without moving them for 2-3 minutes until a golden crust forms on the bottom.
Step 6: Flip scallops and cook for another 1-2 minutes until cooked through, then transfer to your serving platter.
Step 7: In the same skillet, melt 4 tablespoons butter with remaining garlic over medium heat, stirring constantly until fragrant, about 1 minute.
Step 8: Add white wine or stock and let it reduce for 1 minute, creating a light sauce.
Step 9: Broil lobster tails for 5-7 minutes until the meat is opaque and cooked through.
Step 10: Arrange lobster tails and scallops on a serving platter, drizzle with garlic butter sauce, garnish with fresh parsley and lemon slices, and serve immediately.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 2 days. Because seafood dries out quickly, enjoy this dish fresh when possible for the best texture and flavor.
To reheat, place portions on a baking sheet, cover loosely with foil, and warm gently in a 300-degree oven for about 5-8 minutes until heated through. Avoid the microwave, as it can make the scallops and lobster tough and rubbery.
For best results, reheat only what you plan to eat and don’t repeat the reheating process. This dish is truly at its peak when served fresh and warm right from the pan.
