Instructions
Step 1: Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper or foil for easy cleanup.
Step 2: In a small bowl, combine Old Bay seasoning, paprika, red pepper flakes, salt, and black pepper to create your seasoning blend.
Step 3: Arrange the halved potatoes and sausage slices on the baking sheet, then drizzle with 4 tablespoons of melted butter and half of your seasoning mix. Toss to coat evenly.
Step 4: Bake the potatoes and sausage for 15 minutes until they begin to soften.
Step 5: Remove the baking sheet from the oven and add the corn, cherry tomatoes, and shrimp around the pan.
Step 6: In a small saucepan, melt the remaining 4 tablespoons of butter with the minced garlic over low heat for 2 minutes until fragrant.
Step 7: Drizzle the garlic butter over all ingredients and sprinkle with the remaining seasoning blend, tossing gently to combine.
Step 8: Return to the oven and bake for 12 to 15 minutes until the shrimp are pink and cooked through.
Step 9: Transfer to a serving platter, garnish with fresh lemon slices and parsley, and enjoy immediately.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors actually deepen overnight, making this dish even better as a next-day meal.
To reheat, place leftovers in a 325-degree oven for about 10 minutes, or reheat gently in a skillet over medium-low heat with a splash of water or broth to prevent drying out.
For best results, avoid reheating in the microwave as it can make the shrimp rubbery. The oven or stovetop method preserves the tender texture beautifully.
