step 1 In a large skillet, heat 1 1/2 tablespoons olive oil over medium-high heat. Add diced potatoes and cook for 10-12 minutes, turning occasionally, until golden and fork-tender. Remove and set aside.
step 2 In the same skillet, add a tablespoon of olive oil and sauté the sliced bell pepper and onion until softened and lightly charred, about 5-7 minutes. Season with salt and pepper. Remove and set aside.
step 3 Pat steak bites dry with paper towels. Season with salt, pepper, and paprika.
step 4 Increase heat to high, add steak bites to the skillet in a single layer. Sear for 2-3 minutes per side until browned and cooked to your desired doneness.
step 5 Reduce heat to medium and add butter and garlic to the pan. Stir to melt the butter and coat the steak bites in the garlic butter.
step 6 Return the cooked potatoes, peppers, and onions to the skillet. Toss everything together and sprinkle with chopped parsley.
step 7 Serve hot, garnished with more parsley if desired.
Storage and Reheating Tips
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat until warmed through. Avoid microwaving steak for too long to prevent it from becoming tough.
