Instructions:
step 1 Preheat oven to 200°C (400°F). In a bowl, mix olive oil, lemon juice, garlic, thyme, oregano, paprika, salt, and pepper.
step 2 Coat the chicken drumsticks in the marinade and let sit for 15-30 minutes if time allows.
step 3 Place the drumsticks in a baking dish and roast for 35-40 minutes, turning halfway, until golden brown and cooked through.
step 4 While chicken bakes, rinse the rice. Add rice, water, butter, and salt to a pot. Bring to a boil, then reduce to low heat, cover, and simmer for 15-18 minutes until rice is tender. Fluff with a fork and sprinkle with dried parsley if using.
step 5 Heat olive oil in a pan over medium heat. Add garlic and sauté green beans for 5-7 minutes until tender-crisp. Season with salt and pepper.
step 6 Serve roasted drumsticks with rice and green beans. Garnish with chopped parsley.
Storage and Reheating Tips:
Refrigerate leftovers in airtight containers for up to 3 days. Reheat chicken and rice in the microwave or oven until warmed through. Green beans can be reheated in a skillet or microwave. This dish is also freezer-friendly for up to 1 month.
