Garlic Parmesan Chicken Skewers

Instructions

Step 1: In a large bowl, whisk together olive oil, Parmesan, garlic, lemon juice, parsley, Italian seasoning, salt, and pepper.

Step 2: Add chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours.

Step 3: Preheat grill or grill pan to medium-high heat. Thread marinated chicken pieces onto skewers.

Step 4: Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.

Step 5: Remove from heat and let rest for 5 minutes. Sprinkle with extra Parmesan and parsley before serving.

Storage Information

Store leftover chicken skewers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or a skillet until warmed through. Avoid microwaving as it may dry out the chicken. These skewers can also be frozen for up to 2 months.
