Instructions:
step 1 Place sliced potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and simmer for 10-15 minutes until fork-tender. Drain and set aside.
step 2 In a large skillet, heat olive oil over medium heat. Add diced red onion and sauté for 2-3 minutes until softened.

step 4 Add the cooked potatoes to the skillet and gently toss to coat with the warm dressing.
