Instructions:
step 1 Heat vegetable oil in a deep fryer or large pan to 180°C (350°F).
step 2 Fry the chips in batches for 6–8 minutes until golden brown and crispy. Drain on paper towels and season with salt.
step 3 While chips are frying, heat a nonstick skillet over medium heat.
step 4 Add ham slices to the pan and heat for 1–2 minutes per side until warmed through with a light sear.
step 5 Remove ham and keep warm. Add a little oil or butter to the same skillet.
step 6 Crack in the eggs and fry until the whites are set but yolks remain runny (or to your desired doneness).
step 7 Plate the ham, top with fried eggs, and serve alongside a generous portion of chips.
step 8 Garnish with a sprinkle of chopped parsley and cracked black pepper.
Storage and Reheating Tips:
This dish is best served fresh, but chips can be stored in the fridge for 1–2 days and reheated in the oven to regain crispiness. Reheat ham gently in a skillet or microwave. Eggs are not ideal for reheating, so cook fresh if making ahead.
