Instructions
Step 1: Preheat oven to 400°F (200°C). In a large bowl, whisk together lemon juice, zest, honey, Dijon mustard, soy sauce, and olive oil.
Step 2: Season chicken with garlic powder, oregano, thyme, salt, and pepper. Add to the bowl and toss to coat evenly in the marinade. Let sit for 15 minutes.
Step 3: Place chicken pieces and potato wedges in a large baking dish. Pour any remaining marinade over the top.
Step 4: Bake for 40-45 minutes, turning once halfway through, until the chicken is cooked through and golden, and the potatoes are tender.
Step 5: Garnish with fresh lemon slices and chopped parsley. Serve warm.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until warmed through.
