Instructions
Step 1: Peel potatoes, cut into fries, and soak in cold water for 30 minutes to remove excess starch.
Step 2: Pat fries dry with a paper towel, then heat oil to 325°F and blanch fries for 5-6 minutes until pale. Remove and drain on paper towels.
Step 3: Divide beef into 4 equal portions and form into patties about 3/4-inch thick. Make a small indent in the center with your thumb.
Step 4: Season patties generously with salt and pepper on both sides just before cooking.
Step 5: Heat a skillet or grill to medium-high heat. Cook patties for 3-4 minutes per side for medium doneness.
Step 6: In the final minute of cooking, place a slice of cheese on each patty and cover with a lid to melt.
Step 7: Lightly butter and toast the brioche buns until golden brown.
Step 8: Increase oil temperature to 350°F and fry the blanched fries for 2-3 minutes until golden and crispy. Drain and season with salt.
Step 9: Assemble burgers by spreading mayonnaise on the bottom bun, then layer with lettuce, tomato, onion, pickles, and the cheese-topped patty. Top with the bun.
Step 10: Serve burgers immediately with hot fries drizzled with ketchup.
Storage and Reheating Tips
Store leftover cooked patties in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium-low heat to avoid drying them out.
Fries are best eaten fresh and crispy, but leftovers can be stored in an airtight container for 2 days. Reheat in a 375°F oven for 10-12 minutes to restore crispness.
For best results, assemble burgers just before serving to keep the buns from becoming soggy. You can prep all components ahead and assemble them to order.
