Instructions
Step 1: In a bowl, whisk together orange juice, lime juice, lemon juice, olive oil, garlic, honey, salt, black pepper, paprika, oregano, and cumin to create the marinade. /n
Step 2: Place the chicken breasts in a shallow dish or zip-top bag and pour the marinade over them, ensuring they are well coated. /n
Step 3: Cover and refrigerate for at least 1 hour, preferably 4–6 hours for maximum flavor. /n
Step 4: Preheat the grill to medium-high heat and lightly oil the grates. /n
Step 5: Remove the chicken from the marinade and let excess drip off. Discard used marinade. /n
Step 6: Grill the chicken for 5–7 minutes per side, or until fully cooked and nicely charred. /n
Step 7: Grill pineapple slices for 2–3 minutes per side if using, until caramelized. /n
Step 8: Remove chicken from grill, let rest for 5 minutes, then garnish with fresh parsley and serve with grilled pineapple.
Storage and Reheating Tips
Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat or in the microwave in short intervals. You can also freeze the cooked chicken for up to 2 months; thaw overnight in the refrigerator before reheating.
