Kota (South African Street Sandwich)

Instructions:
step 1 Slice off the top of the quarter loaf and hollow out some of the soft center to create space for fillings.
step 2 Layer a spoonful of atchar at the base (if using) to add a spicy kick.
step 3 Add a handful of hot fries followed by lettuce and tomato slices.
step 4 Place the cooked meats—polony, sausage, and grilled or fried beef/chicken—over the vegetables.
step 5 Add slices of cheese on top so it starts to melt slightly.
step 6 Drizzle generously with tomato sauce, barbecue sauce, and sandwich sauce or mayonnaise.
step 7 Top with a fried or scrambled egg if desired.
step 8 Optionally, butter the bread top and toast it on a pan until golden, then place it over the fillings.
step 9 Secure the Kota with a skewer or serve immediately while still warm.

Storage and Reheating Tips:
Kota is best enjoyed fresh. If you must store leftovers, wrap tightly and refrigerate for up to 1 day. Reheat in the oven to regain crispiness, though the bread may soften. Fries are best added fresh if reheating.
