Instructions:
Step 1: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
Step 2: Stir in salt, olive oil, and flour gradually. Knead the dough until smooth and elastic, about 5–7 minutes.
Step 3: Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Step 4: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Step 5: Divide the dough into 8 portions. Flatten each piece into a rectangle, place a piece of mozzarella in the center, and roll up, sealing the edges.
Step 6: Shape each piece into a pretzel shape.
Step 7: Bring a pot of water to a boil and carefully stir in baking soda. Boil each pretzel for 30 seconds, then place on the baking sheet.
Step 8: Brush with beaten egg and sprinkle with coarse salt, garlic powder, and rosemary if desired.
Step 9: Bake for 12–15 minutes or until golden brown and cheese is bubbling.
