2 lbs (900 g) mutton, cut into pieces
1 cup plain yogurt
2 tablespoons ginger-garlic paste
1 teaspoon turmeric powder
2 teaspoons red chili powder

3 cups basmati rice
6 cups water
2 bay leaves
4 green cardamom pods

3 large onions, thinly sliced
2 tomatoes, chopped
4 green chilies, slit
1/2 cup fresh cilantro, chopped
1/2 cup fresh mint leaves, chopped
1 teaspoon biryani masala
1/4 teaspoon saffron soaked in 2 tablespoons warm milk (optional)
