Instructions:
step 1 Preheat your oven to 400°F (200°C).
step 2 In a large bowl, combine olive oil, oregano, thyme, paprika, red pepper flakes (if using), garlic, lemon juice, salt, and pepper.
step 3 Add the chicken drumsticks to the bowl and toss to coat well with the herb marinade.
step 4 In a large baking dish, add the chopped potatoes, bell peppers, and onion.
step 5 Drizzle a little olive oil and season with salt and pepper over the vegetables, tossing to combine.
step 6 Nestle the marinated drumsticks on top of the vegetables in the baking dish.
step 7 Bake uncovered for 45-55 minutes, or until the chicken is fully cooked and golden brown and the potatoes are tender.
step 8 Garnish with fresh parsley before serving.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through or in the microwave in 1-minute intervals. To keep the chicken skin crispy, reheating in the oven is recommended.
