Instructions
Step 1 Cook the bowtie pasta according to package instructions until al dente, reserving 1/2 cup of pasta water before draining.
Step 2 In a large skillet or pot, heat olive oil over medium heat and cook the sausage until browned, breaking it apart as it cooks.
Step 3 Add diced onion and sauté for 3–4 minutes until softened.
Step 4 Stir in garlic and cook for 1 minute until fragrant.
Step 5 Add diced tomatoes, tomato sauce, red pepper flakes, Italian seasoning, salt, and pepper, stirring to combine.
Step 6 Let the sauce simmer for 5–7 minutes to develop flavor.
Step 7 Add the cooked pasta to the skillet and toss to coat in the sauce.
Step 8 Stir in fresh spinach and cook until wilted.
Step 9 Add reserved pasta water as needed to loosen the sauce.
Step 10 Sprinkle with grated Parmesan cheese and mix well.
Step 11 Serve hot with extra Parmesan if desired.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat with a splash of water or broth to loosen the sauce, or microwave until heated through. This dish can also be frozen for up to 2 months, though the pasta texture may soften slightly upon reheating.
