Oven-Baked Cajun Salmon & Shrimp Tray

Instructions

step 1 Preheat your oven to 400°F (200°C) and line a baking tray with foil for easy cleanup.
step 2 Place the salmon fillet in the center of the tray and arrange the sliced onions and shrimp around it.
step 3 In a bowl, mix melted butter, olive oil, Cajun seasoning, garlic powder, paprika, salt, pepper, and lemon juice.
step 4 Pour the seasoning mixture evenly over the salmon and shrimp, using a brush or spoon to coat well.
step 5 Bake in the preheated oven for 18–20 minutes, or until the salmon flakes easily and the shrimp are pink and cooked through.
step 6 For a slightly crisp top, broil for an additional 2–3 minutes.
step 7 Remove from oven, sprinkle with chopped parsley, and serve with lemon wedges if desired.

Storage and Reheating Tips

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in the oven at 300°F (150°C) until warmed through, or microwave briefly, being careful not to overcook the shrimp or salmon. Best enjoyed fresh!
