Instructions
Step 1: Preheat your oven to 300°F (150°C). /n
Step 2: Pat the pork butt dry with paper towels and rub it all over with olive oil. /n
Step 3: In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, thyme, rosemary, and cayenne. /n
Step 4: Rub the seasoning mixture evenly over the pork. /n
Step 5: Place the pork in a roasting pan and pour chicken broth into the bottom of the pan. /n
Step 6: Cover tightly with foil and roast for 3 to 4 hours, until the meat is tender. /n
Step 7: Remove the foil and increase oven temperature to 425°F (220°C) to crisp the exterior for 20–30 minutes. /n
Step 8: Let the pork rest for 10–15 minutes before slicing or shredding.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the oven or microwave with a bit of broth to keep the meat moist. You can also freeze portions for up to 3 months.
