Sausage and Potato Skillet

Instructions
Step 1 Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Step 2 Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until they begin to soften and turn golden.
Step 3 Remove potatoes from the skillet and set aside.
Step 4 In the same skillet, add another tablespoon of oil and cook the sliced sausage until browned on both sides.
Step 5 Add chopped onion and bell peppers to the skillet and sauté for 4–5 minutes until softened.
Step 6 Stir in garlic, paprika, oregano, thyme, salt, and black pepper, cooking for 1 minute until fragrant.
Step 7 Return the potatoes to the skillet and toss everything together.
Step 8 Drizzle remaining olive oil if needed and cook for another 5–7 minutes until potatoes are crispy and fully cooked.
Step 9 Sprinkle with fresh parsley and red pepper flakes if using.
Step 10 Serve warm directly from the skillet.

Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat to restore crispiness, or microwave for 1–2 minutes until heated through. This dish can also be frozen for up to 2 months, though potatoes may soften slightly upon reheating.
