Sausage, Egg & Cheese Pie with Crinkle-Cut Chips and Beans

Instructions

step 1 Preheat oven to 200°C (400°F). Grease a deep pie dish.
step 2 In a bowl, mix sausage meat with chopped onion, carrot (if using), grated cheese, herbs, salt, and pepper.
step 3 Line the base of the pie dish with one sheet of pastry, pressing gently into the sides.
step 4 Add half the sausage mixture, then place the hard-boiled eggs evenly in a row through the middle. Cover with the rest of the sausage mix and press down gently.
step 5 Top with another layer of pastry and crimp the edges to seal. Use extra pastry to create a lattice pattern on top if desired. Brush with beaten egg.
step 6 Bake for 40-45 minutes or until the pastry is golden and the meat is cooked through. Let rest for 10 minutes before slicing.
step 7 While the pie bakes, preheat oven to 220°C (425°F). Toss crinkle-cut potato slices in oil, paprika, salt, and pepper. Arrange on a baking tray and bake for 30-35 minutes, flipping halfway through, until golden and crisp.
step 8 Heat baked beans in a saucepan over medium heat until bubbling.
step 9 Serve a slice of pie with a side of crinkle-cut chips and warm baked beans.

Storage and Reheating Tips

Store pie slices and chips in separate airtight containers in the fridge for up to 3 days. Reheat in the oven for best texture. Beans can be stored in a covered bowl and reheated on the stove or in the microwave.
