Instructions
Step 1: Preheat the oven broiler to high or set a toaster oven to toast mode.
Step 2: In a bowl, combine the chopped shrimp, lump crab meat, mozzarella cheese, mayonnaise, lemon juice, Old Bay seasoning, and parsley. Mix gently until combined.
Step 3: Spread the seafood mixture evenly over two slices of bread, then top with the remaining bread slices to form sandwiches.
Step 4: Spread the softened butter on the outside of each sandwich.
Step 5: Heat a skillet over medium heat and cook the sandwiches for 2-3 minutes per side until golden and the cheese begins to melt.
Step 6: Transfer the sandwiches to a baking sheet and place under the broiler for 2-3 minutes, watching carefully, until the tops are bubbly and golden.
Step 7: Slice in half, garnish with extra parsley if desired, and serve warm.
Storage Information
Store any leftover shrimp crab melts in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or skillet to restore crispiness before serving.
