Instructions
Step 1: In a large bowl, combine olive oil, lime juice, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Add the sliced steak and toss to coat. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).
Step 2: Heat a large skillet or grill pan over medium-high heat. Add the marinated steak slices and cook for 3-4 minutes on each side, or until browned and cooked to desired doneness. Remove and set aside.
Step 3: In the same skillet, add a bit more oil if needed and cook the sliced onions and bell peppers until tender and slightly charred, about 6-8 minutes.
Step 4: Return the steak to the skillet with the vegetables. Toss everything together and cook for another minute to blend the flavors.
Step 5: Serve hot with warm flour tortillas and your favorite toppings.
Storage Information
Store any leftover fajitas in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm in a skillet over medium heat until heated through. For best results, store tortillas separately and warm them fresh before serving.
