Step 1: Cook or soak the wide noodles according to package instructions, then drain and set aside.
Step 2: In a bowl, toss the sliced beef with 1 tablespoon soy sauce and let it marinate briefly.
Step 3: Heat vegetable oil in a wok or large pan over high heat.
Step 4: Add garlic and ginger, sautéing until fragrant.
Step 5: Add the beef and stir-fry until browned and cooked through.
Step 6: Add bok choy and cook for 1–2 minutes until slightly wilted.
Step 7: Stir in remaining soy sauce, oyster sauce, chili paste, sugar, and black pepper.
Step 8: Add the cooked noodles and toss everything together until well coated.
Step 9: Drizzle with sesame oil, sprinkle green onions, and mix briefly before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a skillet over medium heat with a splash of water or oil to loosen the noodles.
Avoid microwaving for too long as noodles may become chewy.
