Spinach Rice Recipe

Instructions:
step 1 Rinse the rice under cold water until the water runs clear. Drain and set aside.
step 2 In a large saucepan, heat oil or butter over medium heat. Sauté the chopped onion until soft and translucent, about 3-4 minutes.
step 3 Add garlic, curry powder, turmeric, and cumin (if using). Stir for 1 minute until fragrant.

step 7 Fluff the rice with a fork and serve hot as a side dish to meats, curries, or Sunday plates.

Store leftover spinach rice in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or broth to restore moisture.
