Instructions
Step 1: Preheat oven to 400°F (200°C). Scrub and dry the potatoes. Pierce each with a fork and bake for 45-60 minutes until tender.
Step 2: Once baked, slice open each potato, fluff the inside with a fork, and add butter, cheddar cheese, sour cream, green onions, salt, and pepper. Let cheese melt slightly before serving.
Step 3: While potatoes are baking, steam broccoli florets over boiling water for 4-5 minutes until bright green and tender-crisp. Season with salt and optional butter.
Step 4: Season steak bites with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add steak bites and sear for 2-3 minutes per side until browned and cooked to desired doneness. Remove from heat.
Step 5: In the same skillet, melt butter and add garlic. Sauté for 1 minute, then stir in chopped herbs. Return steak bites to the pan and toss to coat in the garlic butter sauce.
Step 6: Plate the steak bites with the loaded baked potato and steamed broccoli. Serve hot.
Storage and Reheating Tips
Store leftovers in separate airtight containers in the fridge for up to 3 days. Reheat steak bites in a skillet over low heat for best texture. Potatoes can be microwaved until warm, and broccoli reheats quickly in the microwave or steamer.
