Instructions:
Step 1 Preheat oven to 400°F (200°C). Scrub and prick potatoes with a fork, then place them on a baking sheet and bake for 45-60 minutes until tender.
Step 2 While potatoes are baking, pat the steak dry and season both sides with salt, pepper, garlic powder, paprika, and steak seasoning if using.
Step 3 Heat a cast-iron skillet over medium-high heat. Add olive oil, then sear the steak for 3-4 minutes per side or until your desired doneness. Let it rest for 5-10 minutes.
Step 4 In a small skillet, melt butter over medium heat and cook shrimp seasoned with Old Bay or Cajun seasoning for 2-3 minutes per side until pink and cooked through. Set aside.
Step 5 When potatoes are done, slice them open. Fill one with shrimp and a little butter. In the second potato, mash slightly and top with shredded cheese. Return to the oven for 5 minutes to melt cheese.
Step 6 Toss broccoli with olive oil, salt, and pepper. Roast in the oven at 400°F for 15-20 minutes or until lightly browned and tender.
Step 7 Plate the steak with both baked potatoes and roasted broccoli. Garnish the cheesy potato and shrimp potato with parsley if desired.
Storage and Reheating Tips:
Store leftovers in airtight containers in the refrigerator for up to 3 days. Reheat the steak and shrimp in a skillet or microwave. Potatoes and broccoli can be reheated in the oven or microwave until warmed through.
