Sticky BBQ Ribs Plate with Fries, Samosas & Slaw

Instructions

Step 1: Season the pork rib portions with paprika, garlic powder, onion powder, black pepper, and salt. Rub with 1 tbsp olive oil and let sit for 15 minutes.

Step 2: Preheat your oven to 375°F. Place seasoned ribs on a baking sheet and bake for 35 minutes until partially cooked and tender.

Step 3: While ribs bake, prepare the samosa filling by mixing mashed potatoes, peas, curry powder, turmeric, and salt in a bowl.

Step 4: Fill each samosa pastry sheet with 2 tbsp of the potato mixture, fold into a triangle, and seal the edges. Heat oil in a deep pan and fry samosas until golden brown, about 4-5 minutes per side. Set aside on paper towels.

Step 5: For the fries, cut potatoes into fries and soak in cold water for 10 minutes. Pat dry thoroughly, then toss with 2 tbsp vegetable oil and seasoning salt.

Step 6: Spread fries on a baking sheet and bake at 400°F for 25-30 minutes, stirring halfway through, until golden and crispy.

Step 7: Remove ribs from the oven and brush generously with BBQ sauce. Return to oven for 8-10 minutes until sticky and caramelized.

Step 8: Make the slaw by combining shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a bowl.

Step 9: Arrange everything on a platter: place BBQ ribs in the center, fries on one side, samosas on another, and slaw below. Drizzle fries with ketchup and serve immediately.

Storage and Reheating Tips

Store leftover ribs in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven at 325°F for 10-12 minutes with a light brush of BBQ sauce to restore moisture and flavor.

Fries are best enjoyed fresh, but you can store extras in the fridge for 2 days. Reheat in a 375°F oven for 5-7 minutes to restore crispiness. For samosas, keep them in an airtight container and reheat in the oven at 350°F for 5 minutes.

The coleslaw will keep refrigerated for up to 5 days, making it perfect for meal prep. However, the dressing may soften the cabbage slightly over time, so add extra dressing fresh if desired.
