Storing tomatoes in ash: a traditional technique for prolonged freshness

Instructions for use: step by step

  1. Prepare the ash

Make sure the ash is  completely dry .  Sift it  if necessary to remove any pieces of charcoal or impurities.

  1. Arrange the tomatoes

Line the bottom of the container with a layer of ash. Then place the tomatoes,  spacing them well apart  —they should not  be touching .

  1. Cover with ashes

Cover each tomato with ash until it is  completely covered .  Alternate layers  if storing more than one.

  1. Seal and store

Close the container tightly and place it in a  cool, dry, dark place , such as a cellar or pantry.
