Instructions

Step 1: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

Step 3: In a large bowl, beat the butter and granulated sugar until light and fluffy.

Step 4: Add the egg, vanilla extract, strawberry gelatin mix, and pink food coloring if using. Mix until fully combined.

Step 5: Gradually add the dry ingredients and mix until a soft dough forms.

Step 6: Scoop tablespoon-sized portions of dough and roll them in sanding sugar. Place them on the prepared baking sheets.

Step 7: Bake for 10–12 minutes until the cookies are set and slightly crackled on top. Allow them to cool completely.

Step 8: For the filling, beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla extract, then mix until creamy and fluffy.

Step 9: Spread or pipe the cheesecake filling onto the flat side of one cookie and top with another cookie to create a sandwich.

Step 10: Chill the sandwich cookies for 15–20 minutes before serving for the best texture.

Storage and Reheating Tips

Store Strawberry Cheesecake Sandwich Cookies in an airtight container in the refrigerator for up to 5 days. Serve chilled or allow them to sit at room temperature for a few minutes before eating. These cookies can also be frozen for up to 2 months in a sealed container.
