Instructions:
step 1 Preheat oven to 400°F (200°C). In a bowl, whisk together olive oil, melted butter, garlic powder, onion powder, paprika, Italian seasoning, dried parsley, salt, and pepper.
step 2 Place chicken breasts in a large greased baking dish and brush or rub the herb mixture evenly over each piece.
step 3 In a separate bowl, toss baby potatoes, carrots, and green beans with olive oil, garlic powder, paprika, salt, and pepper.
step 4 Arrange seasoned vegetables around the chicken in the baking dish, spreading everything out in an even layer.
step 5 Cover the dish with foil and bake for 25 minutes. Remove foil, baste chicken with juices, and bake uncovered for another 15-20 minutes until chicken is cooked through (165°F internal temp) and potatoes are tender.
step 6 Broil for the last 2-3 minutes for added browning if desired. Garnish with fresh parsley before serving.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F until warmed through or microwave in short intervals. Add a splash of broth or water to maintain moisture.
