Instructions
Step 1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Step 2. Soak the cut potatoes in cold water for 30 minutes to remove excess starch.
Step 3. Drain and thoroughly pat the potatoes dry with paper towels.
Step 4. Toss the potatoes with olive oil, garlic powder, paprika, salt, and black pepper.
Step 5. Arrange the fries in a single layer on the prepared baking sheet.
Step 6. Bake for 35–40 minutes, flipping halfway through, until golden and crispy.
Step 7. Remove the fries from the oven and immediately toss with grated Parmesan cheese and parsley.
Step 8. While the fries are baking, season the steak cubes with salt, pepper, and paprika.
Step 9. Heat olive oil in a large skillet over medium-high heat until very hot.
Step 10. Add the steak cubes in a single layer and sear for 2–3 minutes per side until browned.
Step 11. Cook the steak in batches if necessary to avoid overcrowding the pan.
Step 12. Reduce the heat to medium and add the butter to the skillet.
Step 13. Stir in the minced garlic, thyme, and rosemary.
Step 14. Cook for 1 minute until fragrant.
Step 15. Return all steak bites to the skillet and toss in the garlic herb butter.
Step 16. Sprinkle with fresh parsley and cook for another minute.
Step 17. Transfer the steak bites to a serving platter.
Step 18. Serve immediately with the crispy Parmesan fries.
Step 19. Garnish with extra Parmesan cheese and fresh parsley before serving.
Storage and Reheating Tips
Store leftover steak bites and fries separately in airtight containers in the refrigerator for up to 3 days.
Reheat steak bites in a skillet over medium heat with a small amount of butter to maintain their tenderness.
Reheat fries in a 400°F (200°C) oven or air fryer for 5–7 minutes to restore crispiness.
Avoid microwaving the fries, as they may become soft.
