Instructions
Step 1: Cook spaghetti according to package directions until al dente. Drain and set aside, reserving 1 cup of pasta water.
Step 2: In a small bowl, combine Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, and thyme. Mix well.
Step 3: Pat shrimp dry with paper towels and season generously with the spice mixture, salt, and pepper.
Step 4: Heat 2 tablespoons butter in a large skillet over medium-high heat. Once foaming, add shrimp in a single layer and cook for 2-3 minutes per side until golden and cooked through. Remove shrimp to a plate.
Step 5: In the same skillet, melt remaining 4 tablespoons butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Step 6: Reduce heat to medium-low. Pour in heavy cream and milk, stirring constantly to combine. Heat until small bubbles form around the edges but do not boil.
Step 7: Gradually whisk in Parmesan cheese until melted and smooth. Add lemon juice and season with salt and pepper to taste.
Step 8: Add cooked spaghetti to the cream sauce and toss until well coated. If needed, add reserved pasta water a little at a time to reach desired consistency.
Step 9: Gently fold in the cooked shrimp and warm through for 1-2 minutes.
Step 10: Plate pasta and arrange shrimp on top. Garnish with fresh parsley and serve immediately.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 2 days. Freeze without the shrimp for up to 3 months if desired.
To reheat, place in a skillet over medium-low heat and add a splash of milk or cream to restore the sauce consistency. Stir gently until warmed through. If reheating frozen pasta, thaw overnight first.
For best results, add fresh cooked shrimp when reheating rather than reheating the original shrimp, which can become tough.
