Instructions:
step 1 Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
step 2 Soak the cut sweet potato fries in cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly with a clean towel.
step 3 Toss the fries with cornstarch in a large bowl until evenly coated.
step 4 Add olive oil, paprika, garlic powder, salt, pepper, and cayenne if using. Mix until fries are well coated.
step 5 Spread fries in a single layer on the prepared baking sheet, making sure they are not touching.
step 6 Bake for 15 minutes, flip the fries, then bake for another 10-15 minutes until crisp and browned on the edges.
step 7 Let cool for a few minutes before serving to allow them to crisp up more.
Storage and Reheating Tips:
Store any leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer at 375°F (190°C) for 5-10 minutes to bring back their crispiness. Avoid microwaving, as it can make the fries soggy.
