Instructions

Step 1: Preheat oven to 425°F (220°C). Toss broccolini with olive oil, Parmesan, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 15-18 minutes until crisp-tender and golden.

Step 2: Rub chicken with olive oil, smoked paprika, oregano, garlic powder, salt, and pepper. Let marinate for 10-15 minutes.

Step 3: Grill or sear chicken in a hot skillet over medium-high heat for 6-8 minutes per side until golden and cooked through. Let rest and slice.

Step 4: In a small food processor or bowl, mix together feta, Greek yogurt, sour cream, lemon juice, zest, and herbs until smooth and creamy. Season to taste.

Step 5: Plate sliced chicken with a generous spoonful of lemon feta cream and crispy broccolini on the side. Garnish with fresh parsley or dill if desired.

Storage Information

Store chicken, cream, and broccolini separately in airtight containers for up to 3 days. Reheat chicken and broccolini in the oven or skillet. Stir the feta cream before serving, warm slightly if preferred.
