Instructions
Step 1: Cook the macaroni according to package directions until al dente. Drain and set aside.
Step 2: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
Step 3: Gradually whisk in milk and heavy cream until smooth. Cook until slightly thickened.
Step 4: Stir in cheddar cheese, mozzarella cheese, salt, pepper, and paprika until melted and creamy.
Step 5: Add the cooked macaroni and stir until evenly coated. Keep warm.
Step 6: Season the chicken tenders with salt, pepper, paprika, and garlic powder.
Step 7: Dredge each tender in flour, then dip into beaten eggs, and coat with panko breadcrumbs.
Step 8: Heat vegetable oil in a deep skillet to 350°F (175°C).
Step 9: Fry the chicken tenders for 4–5 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
Step 10: In a small saucepan, combine honey, soy sauce, garlic, butter, and brown sugar over medium heat.
Step 11: Mix cornstarch and water in a small bowl and stir into the sauce. Simmer for 2–3 minutes until thickened.
Step 12: Toss the fried chicken tenders in the honey garlic sauce until fully coated.
Step 13: In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
Step 14: Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss gently.
Step 15: Serve the honey garlic chicken tenders alongside the creamy mac and cheese and fresh garden salad.
Step 16: Spoon any remaining honey garlic sauce over the chicken before serving.
Storage and Reheating Tips
Store the chicken tenders, mac and cheese, and salad separately in airtight containers in the refrigerator for up to 3 days.
Reheat the chicken tenders in an oven or air fryer at 375°F (190°C) for 5–7 minutes to maintain crispness.
Reheat mac and cheese in a saucepan over low heat with a splash of milk to restore its creamy texture.
The garden salad is best enjoyed fresh and should not be frozen.
Cooked chicken tenders can be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.
